Session Description
This AMSA-sponsored pre-congress short course provides early-career meat scientists with a practical framework for launching impactful research careers. The program integrates scientific perspective, strategic research planning, publication and grant development, and career navigation. Four expert-led modules cover: (1) the evolution and future direction of meat quality research; (2) strategic research planning and execution; (3) publishing and grant writing for impact; and (4) career pathways and strategic positioning. The course concludes with a hands-on capstone exercise in which participants work in interdisciplinary teams to develop and pitch a novel mini-grant concept addressing a contemporary meat science challenge. Participants will leave with improved strategic thinking, enhanced understanding of scholarly publishing and funding processes, and clearer career direction.
Program Overview & Speakers
Module 1 – Meat Quality Research: Evolution, Trends, and Future Directions
Speaker: Dr. David Gerrard
Overview of how conventional meat quality research has evolved with scientific innovation, industry demand, and societal expectations. Topics include foundational principles, emerging analytical technologies, translational impact, and future research opportunities.
Module 2 – Strategic Research Planning and Execution
Speaker: Dr. Tracy Scheffler
Frameworks for transforming ideas into executable, fundable research programs. Topics include hypothesis-driven design, project integration, reproducibility, data strategy, workflow efficiency, and risk management.
Module 3 – Publishing and Grant Writing for Impact
Speaker: Dr. Brad Kim
Practical guidance on publishing high-quality manuscripts and developing competitive grant proposals. Topics include journal strategy, peer review dynamics, manuscript construction, funding agency expectations, and resubmission strategy.
Module 4 – Career Pathways and Strategic Positioning
Speaker: Dr. Keith Belk
Exploration of diverse career pathways across academia, industry, and applied research sectors, including professional branding, leadership development, networking, and long-term career sustainability.
Capstone – Group Grant Concept Development
Participants work in interdisciplinary teams to develop and pitch a novel mini-grant/research concept addressing a contemporary meat science challenge, including problem definition, innovation, objectives, approach, impact, and potential funding source. Faculty provide structured feedback.
